This leaf lard comes from heritage Berkshire pigs raised on pasture at Wisconsin family farms; no hormones, USDA-inspected. Sourced from the fat surrounding the kidneys, leaf lard is the most prized cut from the hog: neutral in flavor, high smoke point, and double-rendered for purity. It performs across sautéing, frying, baking, and even skincare. Each 16 oz jar is made in small batches of 6 gallons per week and shelf-stable for 6-12 months at room temperature.
